Risks or negative effects of chemical surfactants has led to the creation of lower risk surfactants. Biological surfactants have been considered in this issue. These surfactants are classified in two general categories with high molecular weight and low molecular weight. Glycolipids, Fatty acids, Lipopeptides and lipoproteins are the most important low molecular weight biosurfactants and on the other hand Polymeric biosurfactants and Particulate biosurfactants are studied in a group of high molecular weight biosurfactants. In recent years significant progress have been reported in supplying and consuming products with these category of molecules. Europe, North America and Asia-Pacific respectively have had the most developments in this context. Iran Despite the progress made in the chemical surfactant industry, has not yet been able to take an effective step in the field of biological surfactants, somehow that the use of these surfactants in Iran is less than 1 percent.
